This recipe came to me in the mailing list of one of Kyiv schools together with the announcement of a master class by Spanish pastry chef Hans Ovando. I think this name is widely known in pastry circles and the recipe will be of interest to many people.

David Bonet's Mexique chocolate cupcake.

The recipe for this wonderful cupcake by David Bonet was shared by Nina Tarasova on her blog. This is a very tasty and delicate cupcake, the impregnation makes it melt in your mouth and the ganache on top adds creaminess and tenderness. The cupcake gets its name from the type of chocolate in the Cacao Barry's range, but you can use any chocolate available. The flavor will be different, but it will still be delicious.

Pierre Hermé's chocolate marshmallows.

Another experiment with marshmallows. We liked the first ones fruit puree very much, now I tried the chocolate ones. I made them for cake decorations and for treats for the kids, but it turns out they are delicious with coffee. You just have to throw a few pieces into hot coffee and wait for the marshmallow to melt, forming a delicious chocolate foam on top. All in all, tasty little things that can be eaten in many different ways. They're delicious.

I like to eat these chewy marshmallows sometimes, but the industrial marmalades are mostly water, gelatin and coloring and flavoring. The homemade version has only fruit puree, sugar and gelatin.
