And the price of the product does not always help to make the right choice. Therefore, to choose a quality cheese, you need to know a few rules.

If you have the opportunity, of course, try the cheese. If you like its flavor, still do not rush to buy it. Inspect the cheese carefully before you buy it. There should be no moisture droplets on the surface of a hard or semi-hard cheese and no cracks in the rind. Consider the cut of the cheese – it should be uniform in texture and color. Poor-quality cheese, on the other hand, has a loose, heterogeneous texture, and the color differs from the middle of the head to the surface.

Try to buy cheeses with a short shelf life, they have a lower preservative content than cheeses with a long shelf life.
Be sure to smell the cheese – it should smell good. If an ammonia or musty odor is present, do not buy it. Pay close attention to cheeses that are wrapped in paper; if possible, unwrap them and make sure they're in good condition.

Carefully inspect them.

Never take cheeses that are soggy or sticky. Semi-soft and soft cheeses should spring back slightly from the touch and be soft in the center. The white fluffy crust on some cheeses should be even in color and slightly moist. Before serving, most cheeses should be held at room temperature for about an hour to allow them to develop their true flavor and aroma. White cheeses such as ricotta and cottage cheese should be eaten chilled.
