Beetrootnik (cold drink)

Heat, heat, heat... You don't want to eat much, especially not something heavy. On such days we are well saved and satiated by lungs, and of course - cool dishes. Here okroshka is familiar to me since childhood, I make it and love it. And beet soup I have never tried, and here I got to its preparation. It turned out very tasty, dietary and not hungry! :)

To make beet kolkolnik we will need:

  • beetroot - 800 gr. ;
  • cucumber - 400 gr. ;
  • kefir or yogurt - 200 ml. ;
  • lemon juice - 2 tbsp ;
  • salt, pepper
  • greens (I took dill, onion)
  • .

Cooking beet soup:

The recipe is very simple. Beets peeled and boiled until ready in two liters of water. Cool (the water in which the beet was boiled, do not pour out), then grate on a coarse grater. Cucumbers are peeled and finely chopped, add to the beets. Also cut finely greens. Pour beet broth, salt, pepper and add kefir. Do not forget to add lemon juice. Mix everything well, send it to the fridge to cool (better overnight).

Serve the beet soup with eggs (if desired).
