Quick cottage cheese toppings

The perfect solution when you want a delicious baked good but don't have time to cook. With a flavorful cottage cheese filling and soft dough, no one will ever guess that you made this pastry in 30 minutes. Vertushki resemble cottage cheese puffs, only they are prepared much faster. The recipe is from the book "Gastronome" with my changes.

Constituents:

  • flaky yeast-free dough - 250 gr.
  • 18% fat cottage cheese - 220 gr.
  • sour cream - 1 tbsp.
  • egg yolk - 2 pcs.
  • zest of 1 lemon
  • vanilla sugar - 0,5 sachets
  • sugar - 3-4 tbsp.
  • raisins - a handful

Cooking:

Wash the raisins, pour boiling water over them and set aside.
Separately beat 1 egg yolk, sugar, vanilla sugar and sour cream with a mixer.

Add cottage cheese and lemon zest and mix.

Add the steamed raisins to the cottage cheese mixture and mix.
Roll out the puff pastry into a thin layer. Spread the curd mixture on the dough and carefully, slightly pressing, roll the dough with the filling into a roll.

Add the filling to the dough.

With a very sharp knife, cut the roll into 1,5–2 cm thick circles.
Line a baking tray with baking paper and place the curd tops on it 3 cm apart. Brush the twirls with beaten egg yolk.

Bake in a preheated oven at 180 degrees Celsius until browned - for 15–20 minutes.

The dough is very quick to prepare, the only skill required is to roll the roll into a braid and a ring. But even that is harder to describe than to do. The dough is moderately sweet and moderately fluffy, but flavorful and tender. In general, for a family tea party – very worthy company.
