Tiramisu cupcakes
What is tiramisu to you? That's right - tender cookies, coffee soak and delicious mascarpone cream. And after all, there's nothing stopping you from combining these ingredients to make cupcakes. I admit that I cooked these cupcakes according to some recipe found on the net, before I went to pastry courses, so now I see a lot of mistakes - and the cream is not neat, and the nozzle for the cream is the wrong size, and in general, spoiled became. But these cupcakes were delicious, so I'll share the recipe.
Composition:
batter:
- flour - 210 gr.
- leavening agent - 1 tsp.
- salt - 0,5 tsp.
- cream butter - 60 gr.
- milk - 85 gr.
- eggs - 3 pcs.
- yolks - 3 pcs.
- sugar - 200 gr.
syrup:
- strong coffee - 100 gr.
- cognac (optional) - 20 gr.
- sugar - 40g .
cream:
- Cream 33% - 150 gr.
- mascarpone - 250 gr.
- sugar powder - 50 gr.
Cooking of "tiramisu":
First mix the flour, baking powder and salt.
Separately melt the butter and mix it with the milk.
Melt the butter and mix it with the milk.
In a saucepan, combine the three eggs, three yolks and sugar.
Place the saucepan in a water bath and whisk the egg mixture until the sugar dissolves.
Then remove from the heat and continue to whisk for about 5 more minutes. The mixture will increase in volume, become pale and very puffy.

Add the dry ingredients in two additions, kneading gently, then pour in the milk and butter mixture and mix gently.
Put paper baskets in a cupcake mold and fill two-thirds full with batter.
Bake the cupcakes in a preheated 160 degree oven for 20 minutes - until browned.
For the syrup, mix hot strong coffee, brandy and sugar and soak the cooled cupcakes. I used a syrup-soaked brush to brush on the cupcakes in three passes.
Whisk cold cream (it whips better) with powdered sugar.
Whisk the mascarpone separately with the powdered sugar (50g) and mix gently with the whipped cream.
Transfer the cream into a pastry bag fitted with a nozzle and pipe it on top of the cupcakes.
