Lemon muffin with raisins in the multicooker
A delicious and flavorful muffin, the crumb is slightly moist and loose, with a slight lemon flavor. This muffin is prepared in a multicooker, but can also be baked in a conventional oven.
Make this muffin in a multicooker.
Compound (for a 2.5 liter multicooker:
- softened butter - 150 gm .
- sugar - 150 gr.
- egg - 4 pcs.
- lemon juice and zest of 1 lemon
- flour - 210 gr.
- leavening agent - 0,5 tsp.
- raisins - 100 gr.
- white chocolate or powdered sugar for coating
Preparation:
Wash the raisins and pour boiling water over them to swell. After 5 minutes, drain and dry the raisins.
Cream the soft butter or margarine with the sugar to a fine paste.
Allow the raisins to dry.
Add the eggs, lemon zest, lemon juice and beat everything with a mixer on medium speed for 5 minutes.
Mix the flour with the leavening agent, pour into the butter and egg mixture, add the raisins and knead for 30 seconds to form a dough.
Lubricate a multicooker mold (or baking dish) with butter, pour the batter into it and cook in Bake mode for 50 minutes. If you cook the muffin in the oven, bake it at 180 degrees until ready.
After baking, leave the cupcake for 15 minutes in the mold to cool, and then transfer it to a rack. Sprinkle the cooled cake with powdered sugar or melted white chocolate.
