Pumpkin muffins by Jamie Oliver
The coming of very - no reason to fall into autumn depression, because soon it will be winter, New Year's holidays.... And autumn is also the time of a truly magical vegetable - pumpkin - bright, juicy, very healthy and delicious. So chase away the moping and go to the kitchen to prepare wonderful muffins, even if you are not very fond of pumpkin - it is not felt in the muffins at all. And be sure to pour citrus glaze over the muffins, it really decorates their appearance and enriches the taste. By the way, muffins are quick and easy to make (Jamie Oliver is a great expert in such recipes), so in half an hour you'll be able to wrap yourself in a blanket with a cup of tea and a delicious muffin and watch an interesting movie or read a new book while the sky is frowning or the rain is pouring outside.
Constituents (about 20 pieces):
Dough:
- pumpkin - 400 gr.
- brown sugar - 350g (I used 250g of white sugar)
- eggs - 4 pcs.
- salt - a pinch
- flour - 300 gr.
- leavening agent - 2 tsp.
- walnuts - 1 handful
- cinnamon - 1 tsp.
- olive oil - 180 ml (I used refined sunflower oil)
glaze:
- zest of 1 tangerine
- zest of half a lemon
- juice of half a lemon
- sour cream - 140 ml
- powdered sugar - 2 tbsp.
- vanilla sugar - to taste
decorating:
- Walnuts - a handful
Preparing pumpkin muffins with citrus glaze:
Peel the pumpkin and grate it.
Add sugar and eggs and mix.
Pour in the butter and stir.
Sift the flour into the pumpkin mixture, add the salt, leavening agent, coarsely chopped nuts and cinnamon and mix.
Spoon the batter into muffin molds and bake in a preheated oven heated to 180 degrees Celsius for about 25 minutes.
Check for doneness with a toothpick.
While the muffins are baking, prepare the glaze - for this, mix all the ingredients.
Cool the finished muffins, drizzle with the glaze and sprinkle with finely chopped walnuts.
