Mashed mushroom soup
For those who love mushroom puree soups but are afraid to try making them themselves, I can reassure you – there is nothing complicated about it, all the ingredients are stewed and then pureed in a blender. I recommend you to try it, I'm sure this soup will become a part of your everyday menu.
Constituents:
- mushrooms – 1 kg
- onion – 1 pc .
- dried wild mushrooms – a handful
- potatoes – 1 large tuber
- cream – 250-300 ml
- butter – small piece
Cooking:
Rinse the dried mushrooms, pour a glass of boiling water, cover and set aside. If you don't have dried mushrooms, you can make the soup without them, they just give a more intense mushroom flavor.
Peel mushrooms and onions, cut onions into small cubes, mushrooms – into quarters.
In a thick-bottomed pan, melt a piece of butter and fry the onions until transparent.
Add the mushrooms in small batches so that they don't start to stew immediately, but brown a little.
Peel and chop the potatoes into small pieces and put them in with the mushrooms. Chop the dried mushrooms finely and send them to the pot. Strain the water in which they were soaked and add to the pot. If necessary, add more water so that it barely covers the mushrooms, cover with a lid and cook until the potatoes are ready – about 25 minutes. During the cooking process, salt and pepper the soup.
Once the soup is cooked, pour into a blender and puree, adding cream. If desired, you can set a few mushrooms aside and add them to the already pureed soup. Serve hot.
