Soup with spinach, rice noodles and vegetables

This soup is pure improvisation "from what was ". I had some frozen spinach and vegetables in the fridge, a bit of meat, and a handful of rice noodles in the cupboard. It ended up being very tasty.

Constituents:

  • chicken or turkey meat - 300 gr.
  • frozen vegetable mix - 2 handfuls
  • frozen spinach - 2 balls
  • potatoes - 3 pieces
  • .
  • onion - 1 onion
  • rice noodles - a small handful
  • salt, pepper - to taste

Cooking soup with spinach, vegetables and rice noodles:

I used a ready-made frozen vegetable mix of corn, green peas, bell peppers, broccoli sprouts, asparagus beans, and carrots to make this soup. You can use these same vegetables fresh, you can substitute them with any vegetables of your liking.
Cut the meat into small pieces, pour water and put it on the fire. After the water boils, cook the meat for about 20 minutes, then add finely chopped onions and diced potatoes.
When the potatoes are semi-cooked - about 20-25 minutes, add the frozen vegetables and spinach and simmer for about 15 more minutes.
Then add rice noodles, salt, pepper, add dill or parsley and cook until cooked - about 10 minutes.
