Banana cookies with oatmeal.
Have you ever bought bananas that were not eaten in time and they are overripe, very flavorful, but not very tasty to eat just like that. I always make banana muffins and the whole family enjoys them.
But recently I wanted something new, and I came across a recipe for banana cookies on an Australian cooking website. I used this recipe as a base but increased the amount of rolled oats and added walnuts (you can add raisins, apricots, etc). The portion yielded two trays of delicious and flavorful cookies. And don't look at its slightly «chunky» appearance, it still turns out great!

By the way, the cookies are completely egg-free, so they're great for kids who can't have eggs for some reason.
Compound:
- large bananas (very ripe) – 3 pcs.
- butter – 125 gr.
- sugar – 1 tbsp.
- flour 1,5 tbsp.
- leavening agent – 1 tsp.
- oat flakes (hercules) 1 tbsp.
- walnuts – 1 tbsp.
Cooking banana cookies with nuts:
Peel the bananas and mashed potato them with a fork.
Chop the walnuts finely.
With a mixer, beat the butter and sugar until creamy.
Add the mashed banana and mix again.
Then add the sifted flour, rolled oats and leavening agent and mix gently.
At the end, stir in the nuts.
Line a baking tray with parchment paper. Using two teaspoons, drop the dough onto the baking tray, leaving a distance of 4-5 cm between the cookies.
Pour the dough onto the baking tray.
Bake in a preheated 200 degree oven for about 10 minutes.
Cool the cookies and serve. They're great with milk!"
Store in a tightly sealed container.
