Banana muffins (muffins)
This recipe belongs to the category "simpler" - everything mixed and put in the oven. But as a result, the muffins are very tasty. Banana gives a very pleasant and distinct flavor. The only remark – you need a special mold for baking muffins.
Ingredients (for 12 muffins):
- banana – 2 pcs.
- margarine - 100 gr.
- sugar - 150 gr.
- eggs – 2 pcs.
- flour – 250 gr.
- leavening agent - 2 tsp. or 1 tsp. baking soda with vinegar .
Cooking banana muffins:
Peel the bananas from their skins and mash them with a fork until they are mushy.
Mix softened margarine well with sugar, add eggs and mix well.
Add the mashed bananas to the mixture and mix.
Add the sifted flour and baking powder and knead into a thick but not stiff dough. Do not mix the dough for a long time, but mix quickly until the ingredients are combined.
Grease a cupcake mold (I use silicone) with vegetable oil.
Place the batter in the molds and place in a preheated oven at 180 degrees for 15-20 minutes. Check the readiness with a toothpick or a fork - pierce the muffin, if there is no dough on the toothpick, then the muffins are ready.
