Jamie Oliver's quick brownies

Famous pastry chefs are very dismissive of Jamie Oliver's desserts. They say they're plain and the presentation is poor. I can agree that his desserts are simple, but that's a plus, because there are many times when you want to treat your family to a tasty dessert for tea, but don't want to bother with the long recipes of French chefs. And it's worth remembering that Jamie is a chef first and foremost, so you shouldn't expect complicated sweets from him. The site already has a recipe for his brawny, and it's an undisputed favorite with readers. This same recipe is easier and faster, so I suggest you try that one too.

Jamie Oliver's quick brownies

Composition:

  • dark chocolate 70% cocoa – 200 gr.
  • unsalted butter – 250 gr.
  • fine cane sugar – 200 gr.
  • cocoa – 6 tbsp.
  • self-rising flour (or regular flour + 1 tsp. leavening agent) – 4 tbsp. with a slide
  • eggs - 4 pcs.
  • a handful of candied ginger
  • a handful of nuts (I have pistachios and hazelnuts)
  • .
  • a handful of dried cherries
  • tangerine zest
  • cream crème fraîche to serve

Preparing Quick Brownies:

Break the chocolate into pieces and chop the room temperature butter. Place both in a food processor, add the sugar, flour, cocoa, pinch of salt and ginger and whizz. Then add the eggs and mix until the dough is smooth.

Fold and wet a piece of baking paper under the tap. Spread it out and line a baking tray with sides of about 32*26 cm. Drizzle the paper with vegetable oil and rub it in.

Pour the dough onto the paper in an even layer about 2.5 cm thick.

Sprinkle the nuts and cherries (I chopped the nuts and cherries coarsely) and press them lightly into the pastry. Finely grate the tangerine zest over the top.

Sprinkle over the nuts and cherries.

Bake in a preheated oven at 180C for 12-14 minutes. Checking with a skewer won't help - if the skewer comes out dry, then you've hopelessly over-baked the brownies. Just make sure the edges look well baked and the center is still slightly soft and moist.

Bake the brownies with a skewer.

Cool slightly and serve warm brownies with tangerine slices and crème fraîche.
