Autumn cupcake with nuts, raisins and fruit puree
A very tasty and flavorful muffin with a slightly moist crumb and delicious flecks of nuts and raisins. The recipe is from the magazine "School of Gastronome".
Composition:
- kefir – 100 ml
- flour – 200 gr.
- butter – 100 gr.
- soft pear – 1 pc.
- banana – 1 pc.
- sugar – 100 gr.
- egg – 2 pcs.
- walnuts – 50 gr.
- raisins – 50 gr.
- leavening agent – 0,5 tsp.
Preparation:
Wash the raisins and soak them in hot water for 10 minutes, then discard them in a colander.
Peel the banana and pear, remove the core from the pear. Mashed potato the fruit into a puree.
Chop nuts into crumbs.
Whisk the fruit mixture with butter, kefir, eggs and sugar.
Add the flour sifted with baking powder and knead the dough. Then add the raisins and nuts and mix.
Grease a baking mold with butter and line with baking parchment.
Spoon the batter into the mold and flatten it.
Allow the batter to rise to the top.
Bake the cupcake in a preheated oven at 160 degrees Celsius for 50 minutes. Check for doneness with a toothpick - if it comes out dry, the muffin is ready.

Cool the finished fruitcake in the mold.
