Craffins

"Googling instagram" I came across such an interesting baked good as Cruffins. As it turns out, it's a hybrid of a Croissant and a Muffin. Two in one, what could be more interesting? My eyes sparkled and my hands itched. I found the recipe in insta, and in the network it turns out that many people already practice this "Wonder-beast".

Compound (for 8 pieces):

  • flour - 300 gr
  • warm water (35C) - 150 ml
  • sugar - 50 gr
  • cream butter (melted) - 50 gr
  • sea salt - 1 tsp. (can be replaced by ordinary fine salt)
  • dry yeast - 7 gr
  • softened butter to grease (layer) the dough - 140 gr

Cooking Kraffins:

Dissolve the yeast in water with a pinch of sugar and leave for 10 minutes.

Flour sift, add salt, sugar. Stir everything, pour in the yeast, melted butter and knead the dough, at least 15 minutes. The dough should become smooth and elastic. Form the dough into a ball and put it in a container, pre-greased with vegetable oil, cover with foil or a towel and leave to rise for about 40 minutes in a warm place. The dough should double in size.

Knead the dough and divide it into 4 equal parts. From each part roll a ball and put it under the foil, letting it rest for 10 minutes. After that, take each ball and roll out as thin as possible to transparency and as far as the dough allows into a long rectangle (a layer width of about 20-22 cm long, as much as the dough allows), rolling, help stretch the dough with your hands. Then smear the layer with softened butter all around the perimeter. Roll up tightly, slightly stretching to the edges, as when molding baguette (who worked with bread, you will understand).
Cut the roll lengthwise with a sharp knife. Roll up each part in a spiral (like a snail), it should be done in such a way that the cuts of the layers are on the outside. Do it carefully, as the dough is quite delicate, soft and fatty. Put the blank in a mold for baking muffins. Repeat the same manipulations with the remaining dough. Cover the billets with foil and let rise for about 1 hour. The author recommends leaving to rise in a warm place. I would recommend at room temperature, because at higher temperatures, the oil started to ooze out of the dough.

Heat the oven to 200 degrees. Bake the kraffins for about 20-25 minutes. If they burn, cover the top with wet parchment or foil. Sprinkle the finished kraffins with powdered sugar. You can also fill with jam, ganache, custard or other toppings. Craffins are crispy like a croissant on top and soft and airy on the inside.

My personal observations:

I would reduce the amount of butter for greasing to 120 grams. If your muffin mold is large enough in diameter, I recommend making 6 instead of 8 pieces to make the kraffins more fluffy.
