Lemon cupcakes (muffins)
This recipe makes very flavorful, fluffy and soft muffins. The batter takes 5 minutes to prepare and another 20 minutes for the muffins to bake, and after half an hour you get a fragrant and delicious pastry.
Constituents (for 12-15 muffins):
- flour - 2 cups
- eggs – 2 pcs.
- zest of 1 lemon
- juice of 1 lemon
- Kefir – 1 cup
- sugar – 180 g
- unscented vegetable oil – 120 ml
- baking soda - 1 tsp.
- leavening agent - 1 tsp.
- vanilla sugar – 1 tsp.
Cooking:
Sift the flour and mix with the sugar, baking soda, baking powder and lemon zest.
Separately, lightly beat eggs with a whisk and mix with kefir, vegetable oil and lemon juice.
Add the liquid ingredients to the dry ingredients and mix quickly.
Fill oiled muffin molds with dough and bake in a preheated oven at 200 degrees Celsius until ready – about 20 minutes.
