Coconut cookies.
A delicious cookie for coconut lovers: slightly brittle, slightly stretchy on the inside. These cookies are even tastier than store-bought cookies, and they're ready in minutes.
Compost:
- coconut shavings - 250 gr.
- sugar - 150 gr.
- eggs - 3 pcs.
- potato starch (if necessary) - 1-2 tsp.
Preparation of cookies "Kokosanka":
Using a mixer, beat the eggs with sugar until a puffy light mass - about 5 minutes.
Pour in the coconut shavings. If the mixture isn't thick enough and the cookies don't hold their shape well, add the starch and mix thoroughly.
Add the coconut shavings.
Using hands soaked in water, form small cones or balls by squeezing the mass tightly and place on a parchment-lined baking tray.
Bake in a preheated 200 degree oven until golden.
If the top of the cookies will burn, you can lower the temperature a little or put the tray on the lower level of the oven.
