Chocolate muffins with cottage cheese filling

Very tasty, very chocolatey cupcakes with a slightly moist center and a surprise of soft, tender cottage cheese inside.

Constituents:

batter:

  • flour - 200 gr.
  • leavening agent - 2 tsp.
  • cocoa powder - 3 tbsp.
  • egg – 1 pc.
  • sugar – 150 gr.
  • vegetable oil without odor - 100 ml
  • Kefir or yogurt without additives - 300 ml

stuffing:

  • soft cottage cheese - 250 gr.
  • sugar - 5 tbsp.
  • vanilla sugar - 1 sachet

Cooking:

Grind the curd with the plain and vanilla sugar into a homogeneous mass. If the cottage cheese is hard, it should be grated through a sieve beforehand.

Prepare.

Mix in sifted flour, baking powder, and cocoa.

Separately whisk egg with sugar, vegetable oil, and yogurt or kefir.

Add the flour mixture and mix well.

Divide the batter in half. Grease muffin molds with oil (if using silicone or paper molds, no need to grease). Spread one part of the dough into the molds, then place about 2 tsp of filling on top of the dough in the center of the mold.

Pour the filling over the top with the remaining batter.

Bake in a preheated oven at 180 degrees until cooked through - about 20 minutes. Check for doneness with a toothpick.
