Curd casserole with pumpkin
Cheese casserole – well, what could seemingly be simpler and… boring. Mix the cottage cheese and eggs, add sugar and into the oven. And no, I completely disagree with this! You can addoatmeal and apples, raisins or nuts, berries, bananas, after all. And then it won't be so boring and mundane anymore.

I have a goal now, for example, – to get my family to eat more vegetables, and since winter in our area does not spoil fresh vegetables (I do not take into account the plastic ones from the supermarket), all the local vegetables that can be. And pumpkin, I think, is a gorgeous vegetable – healthy, beautiful and delicious! Here it is and became the next victim of my «casserole» experiment, and, I admit, quite successful. Shall we cook?
Compound (for a 20-22 cm diameter mold):
- cottage – 600 gr.
- eggs – 2-3 pcs.
- sugar – as desired (I have 2,5 tbsp.)
- starch – 2 tbsp.
- pumpkin puree – 6 tbsp.
- cinnamon

I make pumpkin puree in advance with this recipe and store it in the freezer. But if you don't have a stockpot, bake the pumpkin pieces in a multicooker, microwave, or oven, puree with a blender, and use.

Mix the cottage cheese, pumpkin puree, sugar, starch and yolks.
Separately whisk the egg whites with a pinch of salt into a steady foam. Gently mix the whites into the cottage cheese mixture.
Grease a mold with butter and pour the curd mixture into it.
Bake in a preheated oven preheated in advance to 170C until done. It took me about 30 minutes.
Cool slightly in the mold, then remove.
You can serve with sour cream, jam or just plain.
