Cheesecake gingersnaps
This is a kind of cheesecake. They are simple to make and delicious. Warm with condensed milk – unbeatable.
Composition:
- cottage cheese – 0,5 kg
- eggs – 4 pcs.
- sugar – 1 tbsp.
- flour – 3-4 tbsp.
- baking soda, extinguished with vinegar – 1 tsp.
- vegetable oil for frying – about 0.5 liters
Cooking:
Mix the cottage cheese, sugar, eggs and baking soda until homogeneous.
Mix the cottage cheese, sugar, eggs and baking soda together.
Gradually add the flour and knead the dough. The amount of flour will depend on the dryness of the curd, a proper dough should stick to your hands, but not be very tight.
Add flour to the dough.
Pour about 0.5 liters of vegetable oil into a thick-bottomed pan.
With flour-dusted hands, pinch off small pieces of dough and roll them into balls no bigger than walnuts (otherwise the dough may not bake). Drop the balls into the heated oil and fry until browned, turning occasionally.
You don't need to put a lot of redcurrants in the pan at the same time, as they increase in size considerably. Besides, if there is space, the redcakes will turn over by themselves in the oil after baking the bottom side.
Serve ready redfish with sour cream, condensed milk, jam or eat them just like that.
