Rhubarb meringue dessert
A simple, very quick, diet and easy dessert. Suitable for lovers of rhubarb and meringue, as well as for those who are watching their figure. The rhubarb stays slightly sour, the meringue soft and airy.
Constituents (for 2 servings):
- Rhubarb – 225g .
- egg – 1 pc.
- sugar – 75 gr.
Preparation of rhubarb meringue dessert:
Wash the rhubarb, cut into pieces 4-5 cm long. Place the rhubarb in a baking dish, sprinkle with 50g of sugar and cover with foil.
Cook the rhubarb in a preheated oven heated to 180 degrees for 35 minutes.
Separate the egg yolk from the egg white.
Remove the cooked rhubarb from the oven, cool to room temperature and mix with the egg yolk.
Spread the mixture into 2 baking molds and send to the oven for 10 minutes.
Add the mixture to the baking dish and place in the oven for 10 minutes.
Meanwhile, whisk the egg white with the remaining 25g of sugar. Spoon the meringue into the molds over the rhubarb mixture and return to the oven for another 10 minutes.
