Thick tomato soup with lentils and bacon
A thick, hearty soup with a rich tomato flavor and a light basil aroma. It's quick and easy to make. A great dish to warm you up on a cold winter evening.
Constituents:
- smoked bacon - 300 gr
- carrots - 1 piece
- onion - 1 piece
- celery - 1 stalk
- garlic - 3 cloves
- orange lentils - 0.5 tbsp
- tomatoes in their own juice - 1 can (800 gr.)
- basil - 2 sprigs
Cooking:
Cut the bacon into small cubes and lightly fry in a thick-bottomed pan.
Cook the bacon.
Grate the carrots, grate the onion, garlic and celery into small cubes.
Add the vegetables to the bacon and gently braise over medium heat for 5 minutes.
Rinse the lentils and add to the vegetables, pour in 1 tbsp of water and simmer until the lentils are cooked through - about 10-15 minutes.
Add the lentils to the vegetables.
Peel the tomatoes from their skins and crush them with the juice, add the tomatoes to the pot, salt, pepper, add the bay leaf, add more water if necessary.
Simmer the soup for another 10 minutes, add the chopped basil, simmer the soup for another 5 minutes and turn it off.
If you like your soup pureed, you can chop it in a blender, but if you leave it that way, you can feel the texture of the soup well.
