Poppy cake
Simple but tasty cake for every day. In western Ukraine, poppy seeds are very common - they are used in cakes, cheesecakes and desserts. I had very little to do with this ingredient and decided to fix it. The cake is quite simple - sponge cake and mascarpone-based cream, but it turns out delicious and beautiful.
Composition:
batter:
- poppyseed - 120g .
- milk - 250 ml
- flour - 300g
- leavening agent - 10 gr.
- softened butter - 180 gr.
- sugar - 200 gr.
- vanilla sugar - 1 tbsp.
- egg whites - 3 pcs.
- salt
cream:
- mascarpone - 350 gr.
- sugar powder - 150 gr.
- vanilla sugar - 1 tbsp.
- cream butter for greasing the mold
Poppyseed cake preparation:
Rinse the poppy seeds and strain out the water.
Bring the milk to a boil over low heat, remove from heat, pour the poppy into the milk, stir and cool.
Sift together the flour and leavening agent and mix.
With a mixer, beat the butter with 150g sugar and 1 tbsp vanilla sugar.
Add the sifted flour and gently mix until smooth.
Pour in the milk and poppy seeds and stir again.
Whisk the room temperature egg whites with the remaining sugar with a mixer until stiff, stiff peaks form and gently mix into the dough using a bottom-up motion so that the whites do not fall off and remain airy.
Grease the bottom of the mold with butter.
Spread the batter over the mold and bake in a preheated 180 degree oven for about 1 hour.

Check for doneness with a toothpick: it should come out dry.
Remove the warm ready-made shortcake from the mold, cool completely and cut lengthwise into two pieces.
For the cream, beat the mascarpone with the powdered sugar and vanilla sugar with a mixer.
Pour a third of the cream onto one cake, smooth it out, cover with the second cake and cover the sides and top with the remaining cream.
Decorate the cake to your liking.
Put the cake in the refrigerator for 2-3 hours.
Serve the finished cake chilled.
