Cottage cheese and strawberry cake "Berry"

This is my mother's recipe, she made this cake for the first time, which is generally visible in the photo - crooked edges :)

For the preparation of the curd mass I used:

  • two glasses of strawberries and a few berries for decoration
  • 300 grams of cottage cheese
  • sugar to taste
  • vanilla sugar (half a sachet) gelatin
  • Half a cup of hot water to dissolve the gelatin

For the dough:
    4 eggs (small cake)

  • flour (about a glass)

Cooking cottage cheese and strawberry cake:I start with the dough: I separated the yolks from the whites and whipped the latter with sugar until a good foam (it is not necessary to have a meringue-like consistency, I leave the whites "mobile" :)). I also added a little sugar to the yolks and whipped them separately, combined them with the whites, and added flour. I mixed it well and poured the dough (like thick sour cream) into the mold and into the oven. My oven doesn't have a degree setting, so I usually set it to the maximum, and after 20 minutes I turn it down to the minimum and keep it there for another 10-15 minutes. After that, I cooled the cake and cut it in half.

Now to the cottage cheese: I mashed it well with strawberries and sugar (preferably in a blender, I use my hands), added vanilla sugar and cream. I dissolved the gelatin in half a glass of hot water and poured it into the mixture. I mixed everything well and put it in the fridge to thicken a little.

When the curd mass had become a little less mobile, I poured most of it onto the bottom cake, which I had previously put in the mold, covered it with the top cake and poured the rest of the mass onto it. I also poured a little of the mass on the walls so that the cake was completely covered with it. I decorated the top with halved strawberries and put it in the fridge until it was completely thickened.
