Plum cake
This pie is delicious: the pastry is incredibly airy and fluffy, the plums add a slight sourness and combine very well with the sweet crust. The pie is quick and easy to prepare. I first saw the recipe for this pie at Natasha, for which I thank her so much!
Constituents:
- sugar - 350 gr.
- cream butter or margarine - 350 gr.
- flour - 400 gr.
- eggs - 5 pcs.
- leavening agent - 1 sachet (10 gr.)
- vanillin – 2 tsp.
- soda, quenched with vinegar - 1/3 tsp.
- plum – 1 kg
Cooking:
Whisk the eggs with the sugar and melted margarine. Add sifted flour, baking powder, baking soda and vanillin and mix well.
Add flour, baking powder, baking soda and vanilla and mix well.
Sheet a high-sided baking tray with baking paper. Pour the dough into the mold and spread it all over the tray.
Divide the plums into halves, removing the seeds, and arrange them skin side down over the pie, pressing them into the dough.
Bake the pie in a preheated 180 degree oven until done – about 35-45 minutes.
Sprinkle the finished cooled pie with powdered sugar.
