Chocolate muffins (muffins) with zucchini or zucchinis
The muffins turn out delicious, very chocolatey, with a slightly moist crumb. And no one would guess that the muffins are with zucchini, everyone who has tasted these muffins assumes they are with peaches, apples or candied fruit. I highly recommend making one.
Constituents:
- flour – 1,75 tbsp .
- eggs - 2 pcs.
- zucchini or zucchini – 200 gr.
- kefir – 1 tbsp.
- sugar - 2/3 tbsp.
- vegetable oil without odor - 100 ml
- cocoa powder - 0,5 tbsp.
- leavening agent – 2 tsp.
- chocolate shavings
Cooking:
For preparation, you need to take young zucchini or zucchini, with thin skin and without seeds. Grate or cut zucchini into small cubes, put them in a colander, pour 1 tbsp of sugar and leave for 30 minutes to drain excess liquid.
Mix eggs, vegetable oil and kefir. Mix all dry ingredients separately. Mix the liquid ingredients with the dry ingredients, add zucchini and quickly knead the dough.
Grease muffin molds with oil, fill each mold 3/4 full with batter and bake in a preheated oven at 200 degrees Celsius for 20-25 minutes.
Sprinkle hot muffins with chocolate shavings.
