Potato tartlets with herring and beet puree
A delicious, bright and dressy appetizer made from plain herring. Festive and delicious!
Composition:
- large potatoes - 4-5 pcs.
- fillet of lightly salted herring - 4 pcs.
- beet - 1 piece
- cream 35% or sour cream - 1 tbsp.
- onion - 1 pc.
- table vinegar - 1 tbsp.
- sugar - 1 tbsp.
- salt
Preparation of potato tartlets with herring and beet puree:
Peel the onion and cut into thin half-rings. Dilute the sugar in the vinegar, pour it into the onions, stir and leave at room temperature for 30 minutes.
Allow to cool for 30 minutes.
Boil the potatoes and beets separately in a jacket pot and cool.
Peel the beets and chop them in a blender into a puree, adding salt and cream. In lean version add 1 tbsp. of vegetable oil to the beets instead of cream.
Peel the potatoes and cut into circles about 1 cm thick.
Cut the herring fillets into 1.5 cm wide slices.
Add the herring fillets to the potatoes.
Place 1 tsp of beet puree on each potato circle, top with – a piece of herring and garnish with pickled onions.
