Sandwich with poached egg and liver
This sandwich was made on the fly from whatever was on hand at the time, but it turned out delicious and my husband and I loved it. The ingredients can be varied and changed to your taste - liver can be replaced with a piece of cooked beef, for example, pickled cucumber with fresh cucumber, or a circle of tomato, etc. The key to the sandwich is the poached egg, which transforms this ordinary sandwich into a beautiful and tasty dish.
Constituents (for 2-3 servings):
- bacon - 3-4 slices
- salted cucumber - 2 pcs.
- onion - several rings
- boiled liver - 100 gr.
- eggs - 3-4 pcs.
- ruccola - for serving
Cooking of sandwich with poached egg and liver:
For cooking it is better to take chicken or turkey liver, it is more tender. Boil the liver in boiling water until it's ready - when pierced, no bloody or pinkish liquid should flow from it. But be careful not to overcook the liver, otherwise it can become very dry. Slice the liver into thin slices and lightly salt it.
I have already written in detail about the preparation of poached eggs, here I will only give a short instruction. Take the freshest eggs you can find, as only such eggs will produce a nice and neat egg.
All the eggs are fresh.
In a saucepan, boil water and turn the heat down to low so that the water is barely boiling.
Pour the egg into a sieve to drain the liquid white. Carefully pour the egg into the water, holding it gently with a spoon.
Pour the egg into the water.
Boat the egg for 3-4 minutes.
In a dry skillet, lightly dry the slices of loaf.
Cut the onions into rings or finely chop them. Slice the cucumbers into circles.
Place some arugula on a plate, sprinkle it lightly with salt and drizzle with olive oil. Next to it, place the onions, liver and cucumbers in random order on a slice of loaf.
Place the onions, liver and cucumbers on a plate.
Place a poached egg on top and lightly incise it so the yolk starts to run out.
Serve immediately.
