Meringues (meringue) with chocolate chips
I'm not a big fan of meringue, but a big fan of experimentation. So it was interesting to make meringue with the addition of a very tasty ingredient that can transform whipped whites beyond recognition. Yes, yes, it's chocolate! The meringues turned out fragrant and tasty, my daughter loves to eat them, and everyone I treated to them also liked them. Recipe from Saveurs magazine.
Composition:
- protein – 2 pieces .
- salt – a pinch
- sugar – 110 gr.
- black chocolate (at least 72%) – 50 gr.
Cooking meringue with chocolate:
Chop the chocolate very finely or grate it with a fine grater.
Whisk the egg whites with a pinch of salt into a stiff foam, adding the sugar in small portions.
Gently stir the chocolate into the protein mixture.
Pour the protein mixture gently into a pastry bag fitted with a nozzle and pipe onto a parchment lined baking tray in small shapes.
Bake in a preheated oven at 110-120 degrees for 1 hour and 15 minutes.
Cool on a wire rack and serve.
These meringues can be stored in a tightly covered airtight container for 3-4 days.
