Baked pumpkin salad
"The salad is extremely delicious! Pumpkin in this version is simply unrecognizable!!!! - my friend Elena wrote about this salad. This recipe has been waiting for pumpkin season for months and I finally made it. Pumpkin is really unrecognizable - spicy and spicy, with the flavor of garlic and spices. Well, in the company of ham and cheese - very delicious.
Constituents:
- pumpkin - 200 gr.
- lettuce - 2 bunches
- ham - 100 gr.
- hard cheese - 100 gr.
- pumpkin seeds (or sunflower seeds) - 100 gr.
pumpkin marinade:
- balsamic vinegar - 1 c. l.
- olive oil - 2 tbsp.
- garlic - 5 cloves
- salt, pepper, coriander
dressing:
- olive oil - 4 tbsp .
- balsamic vinegar - 1 tbsp .
Preparation of baked pumpkin salad:
Cut the pumpkin into 1-2 cm slices.
. In a bowl, mix together the garlic, pressed through a press and all the ingredients for the marinade.
Mix the pumpkin with the marinade, place on a baking tray and bake in a preheated oven at 180 degrees Celsius until golden (25-30 minutes).

Separately mix the oil and vinegar for the dressing.
Tear the lettuce leaves with your hands and place on a plate and drizzle with half of the dressing. You can substitute spinach or arugula for the lettuce.
Place thin slices of ham and cheese on the salad.
Place the baked pumpkin slices on top and sprinkle the salad with the seeds. Then pour over the remaining dressing and mix gently.
