Appetizer pancakes with mushrooms and cheese
Pancakes like this are made in Egypt. Thanks to the different dough and different frying of the pancakes with only one side, they can be wrapped in the form of a triangle - an unusual and interesting serving, festive and tasty. The filling can be any kind of meat, vegetable or sweet.
Constituents (for 15-20 pancakes):
batter:
- flour - 155 gr.
- milk - 250 ml
- water - 125 ml
- leavening agent - 1 tsp.
- yeast - 1 tsp.
- sugar - 1 tbsp.
stuffing:
- hard cheese - 100 gr.
- fresh mushrooms - 200-300 gr.
- onion - 1 pc.
- salt, pepper - to taste
- vegetable oil for frying
Preparation of pancakes with mushrooms and cheese:
Dissolve the sugar in warm water, add the yeast, stir and leave for 10 minutes for the yeast to activate (foamy cap will appear on the surface).
Then pour the heated milk into the yeast mixture and pour in the sifted flour and leavening agent.
Mix the batter with a whisk until smooth and leave it for 20 minutes.
Meanwhile, for the filling, fry the onions in a pan with a little sunflower oil, then add the sliced mushrooms.

Roast the mushrooms for about 10-15 minutes - until excess moisture evaporates. Then salt and pepper the stuffing to taste.
Grate the cheese on a fine grater.
Preheat the skillet well without greasing it with anything!
Pour 2,5 tbsp of batter in the center and fry until the pancake is covered with holes and the surface is dry.
Allow the pancake to cook until it is dry.
Remove the pancake and transfer it to a plate. Don't brown the pancakes very much - I overcooked them on the griddle a bit.

Do not stack the hot pancakes on top of each other - they will stick together!
You get 15-20 pancakes.
Then wrap up the filling. Put about 1 tbsp of mushrooms in the center of the pancake, and a little cheese on top.

The edges of the pancakes stick together quite well, the main thing is not to over dry them on the pan.

Then place the pancakes on a baking tray and place in a preheated oven at 180 degrees Celsius for 10-15 minutes for the cheese to melt and serve.
