Sandwich with poached egg and liver

This sandwich was made on the fly from whatever was on hand at the time, but it turned out delicious and my husband and I loved it. The ingredients can be changed to your taste - liver can be replaced with a piece of cooked beef, pickled cucumber - with fresh cucumber, or a circle of tomato, etc. The specialty of the sandwich is the poached egg - it transforms an ordinary sandwich into a beautiful and tasty dish.

Liver with butter and sage.

Another recipe from the Italian cookbook "The Silver Spoon". The book doesn't specify what kind of liver is used, I made it with chicken liver, but I think you can use any kind. Garlic and sage give their flavors and enrich the dish with them, although in general it is just ordinary fried liver. It's a good recipe for a variation of the daily menu.
