Chocolate pancakes with chocolate sauce

Few of my friends are fasting, but all of them like to observe Pancake Day before Lent. You bet - it's a great excuse to eat delicious pancakes. I already have a lot of pancake recipes on my blog, for every taste, and chocolate pancakes are already there too. This recipe is different, much simpler, plus the chocolate sauce dramatically changes the flavor of the pancakes, turning them into a great and very tasty dessert. Try it and invite your friends over for tea!

It is very important to pour it into the flour mixture in small portions, mixing thoroughly each time, so the dough will be lump-free. If lumps do form, simply strain the dough through a sieve.

I bake pancakes on a non-stick pancake pan that only needs to be greased once. If the pancakes don't come off the griddle well, grease the griddle before each subsequent pancake.

This is one of my favorite appetizer pancake recipes: they are flavorful and very tasty, great for both meat fillings and fish.

Pistachio pancakes

I love pistachios in desserts (although salted with beer is fine too). Pistachio eclairs, pistachio tarts, etc. - it's all insanely delicious! In the midst of Pancake Day, it was the pistachio pancakes that made me crave them. The author of the recipe is chef Philippe Andrieu of the pastry house Ladurée. Philippe Andrieu suggests serving these pancakes with cherry filling, but I served them with pistachio custard for the full pistachio delight. Experiment!"
