Meat "accordion" with tomatoes and smoked cheese
Meat «accordion» or meat «book» is a simple but very effective dish. The meat turns out juicy, with a light smell of smoked cheese. Pork loin or neck is used for cooking accordion.
Composition:
- pork loin or neck – 1,5 kg
- tomato – 3 pcs.
- melted smoked cheese – 250 gr.
- mayonnaise – 100 gr.
- mustard – 3 tbsp.
- onion – 1 pc.
- garlic – 6 cloves
Cooking:
Cut tomatoes, onions and melted smoked cheese into circles.
Wash the meat (loin or sirloin, or any other piece of pork with a whole muscle) and cut it across into slices about 1 cm thick, without cutting the slices all the way through. It will turn out as if «book», where the pieces of meat – are pages.
Mix mayonnaise with mustard and crushed garlic, salt and pepper the mixture well.
Coat the meat well with the mayonnaise-mustard mixture, including between the «pages». Place a circle of tomato, onion, and cheese in each cut of meat.
Pour the remaining mayonnaise and mustard mixture on top.
Wrap the accordion tightly in foil and put it in an oven preheated to 180 degrees.
Allow it to cook in the oven.
Bake the accordion in the oven for 80 minutes, then unwrap the foil and keep the meat in the oven for another 10-15 minutes to brown, then remove from the oven and serve.
This accordion is delicious both warm and cold.
