Rabbit baked with vegetables
Rabbit – meat is lean, dietary, and you don't want to spoil it «spoil» by hard roasting, fat, etc. So I always try to figure out how to cook rabbit with a minimum of intervention. Here is this recipe – a successful variation, moreover, requiring from you a minimum of effort, except to cut the carcass and cut vegetables. And the good thing is that you get both meat and a side dish to go with it.
Composition:
- rabbit weighing 1-1,5 kg
- onion – 1 pcs.
- carrots – 1 piece .
- fresh mushrooms – a handful
- cherry tomatoes – a handful
- celery – 1 petiole
- garlic – 2 cloves
- unflavored sunflower oil
- salt, pepper, hops
Cooking rabbit baked with vegetables:
Divide the rabbit into portioned pieces, salt and pepper.
Pour some oil into the bottom of a heatproof mold, squeeze the garlic cloves and stir, coating the oil and garlic over the meat.
Bake in a preheated 180 degree oven until almost done – about an hour.

In the meantime, cut the vegetables into large chunks, drizzle lightly with oil and sprinkle with the hops.
Place vegetables on top of meat and bake until vegetables are desired softness.
Serve hot.
