Vareniki with strawberries
I really love dumplings with berries. In the season of fresh cherries I always cook vareniki with cherries. But I never thought to put strawberries in the filling of dumplings until my Lviv friend Miroslava made such dumplings. What can I say - it was very tasty!
Composition:
batter:
- flour - 3 tbsp.
- egg – 1 pcs.
- water - 2/3 tbsp.
- salt - 0,5 tsp.
stuffing:
- strawberries - 350 gr.
- sugar - 4 tbsp.
to serve:
- sour cream
- sugar
Cooking strawberry dumplings:
The dough can be made any way - custard, on eggs or pastry without eggs, and you can use the one specified in the recipe.
In a bowl, sift 2.5 tbsp of flour into a mound and make a well in the center. Separately beat the egg, salt and water. Pour the liquid into the well in the flour, mix gently and knead a soft, elastic dough, adding the remaining flour if necessary.
Roll the dough into a ball, put it in a bowl dusted with flour, cover it with a towel and let it rest for 20-30 minutes.
Allow the dough to rest for 20-30 minutes.
Meanwhile, peel the strawberries from their stalks, wash and dry them in a colander.
Then sprinkle with sugar and stir.
Roll out the dough and cut out round tortillas with a glass.
Place the strawberries in the center of the flatbread, taking care to take only the berries (if there is a lot of juice, the dumplings will not stick together well and will boil) and mold the dumplings.
In a saucepan, boil water. Put the dumplings into the boiling water, wait until the water boils again and the dumplings float.
Add the dumplings to the boiling water.
Boil them for about 2-3 more minutes (taste the dough for doneness).
Then remove the dumplings with a slurry, shaking off the water. Put the hot dumplings in plates and serve with sour cream and sugar.
