Baked chicken fillet with blackberries, blueberries and thyme
Chicken is a family favorite, I often experiment with different combinations, in this case I added berries and thyme. Cooked it more than once already, as far as I'm concerned, it's indicative.
All of the above.
Ingredients:
For 1 serving
- chicken fillet – 1 piece;
- blueberries – 2 tbsp;
- ejevica – 2 tbsp;
- lime juice;
- honey – 1.5 tsp;
- grain mustard – 1 tsp;
- thyme;
- water – 2 tbsp.
- sea salt, SMCHP
Cooking chicken fillet with blackberries, blueberries and thyme:
Wash the chicken fillets, pat dry with a waffle towel.
Pour the blueberries and blackberries into a bowl. Mash the berries with a fork or mortar and pestle. Add the honey, mustard and chopped thyme and stir to combine. Dip the chicken fillets in the mixture, soak both sides in the berry mixture and leave to marinate for a few hours.
After the time has elapsed, take a baking dish, put the berry mixture that was left at the bottom of the bowl, put the chicken fillets on top, top with a few sprigs of thyme. Salt, pepper, add water and send to a preheated oven to 180 degrees, bake for about 20-25 minutes. Place the ready meat on a dish. Pour the sauce obtained from baking into the cocotte and serve with chicken fillet.
Good appetite!
