Pancakes

I always make traditional family pancakes «by eye» - I add ingredients until I get the right consistency of batter. And the pancakes always turn out delicious. Try to cook them according to the above recipe to «fill your hand» and later you will be able to cook them without measuring the ingredients.

Composition:

  • milk - 1 liter
  • eggs - 4 pcs.
  • sugar – 4-5 tbsp.
  • salt – 1 tsp.
  • flour – 2-2,5 tbsp.
  • plant oil – 3 tbsp.

Cooking the pancakes:

Whisk eggs lightly with salt and sugar. More sugar can be added if desired, but be aware that large amounts can cause the pancakes to burn. Add a little flour until the consistency of the batter is like very thick sour cream. After that, add a little milk, mix well and add the flour again. And so on until all the products specified in the composition are used. This alternation is necessary to avoid lumps. If the flour is poured immediately into the milk, lumps may form, which will worsen the appearance of the pancakes. If the formation of lumps still could not be avoided, it is necessary to strain the dough through a sieve.
The amount of flour required for the batter may differ from that specified in the composition - it depends on the quality of the flour itself. Therefore, it is necessary, focusing on your flour, to add it so much that the dough becomes similar to not very thick sour cream. You can determine the readiness of the dough in another way – dip the tip of a knife into the dough. If the dough does not run off the knife, but lingers on it – it is ready.
After kneading it is necessary to leave the dough for 20-30 minutes so that the gluten in the flour would swell and it would improve its qualities.
After that add vegetable oil to the dough and mix well.
Grease a heated frying pan with vegetable oil, pour the batter into it and spread it evenly over the surface of the pan. Fry on both sides until browned. If the pancakes do not turn well and tear, you need to add a little flour. If the batter is thick and does not spread well – increase the amount of milk.
Serve hot.
