Red fish with vegetables baked in a parchment envelope
I always have a few packs of frozen vegetables in the freezer - they come in handy when I don't have the time or energy to prepare time-consuming and labor-intensive meals. I also freeze fish fillets in advance so I don't have to run to the store and just defrost them if necessary. I advise you to also make such stocks, and then, if necessary, you will spend only 25 minutes to prepare a delicious and, no less importantly, healthy lunch or dinner. Tender fish fillets and colorful vegetables are the best dish for the fall and winter period, when the choice of fresh vegetables is limited. You can use this recipe during the fresh vegetable season too, though. Use your favorite mixture of frozen vegetables and red fish fillets: salmon, trout, salmon, etc., and enjoy the lightness and flavor of this dish.

Constituents(for 2 servings):
- frozen vegetables - 300-400 gr.
- fish fillets - 2 pieces of 200g each .
- olive oil
- salt, freshly ground pepper
- provane herbs
Cooking:
The preparation is very simple. Preheat the oven to 200 degrees.
Spread a piece of baking parchment on a baking tray and sprinkle half of the frozen vegetables on it. You don't need to defrost the vegetables beforehand, but if there is a large amount of ice on them, rinse them under hot water to get rid of it. Adjust the amount and composition of vegetables as you wish. I used a mix of frozen broccoli sprouts, carrots, green pea pods, small corn cobs and bell peppers.
Place one fish fillet on top of the vegetables. Drizzle the fish with olive oil, sprinkle with salt, pepper and a mixture of Provencal herbs. Do the same with the second fish fillet.
Wrap the fish and vegetables tightly in parchment, forming what is called an envelope.
Put the fish in the preheated oven for 25 minutes.
Remove the cooked fish from the oven, carefully open the "envelope" (a lot of hot steam accumulates inside) and serve immediately.
If desired, the cooked fish can be sprinkled with lemon juice.
