Chicken chops in potato breading
I have a friend who lives in Kiev, but like me she came from Crimea. She is a very interesting person, she managed to work as a teacher, a cook, and a proofreader in a newspaper. So she and I went to the store one day to buy food for dinner. I had no ideas, and Olga told me that she was going to cook chicken chops, but not just chicken chops, but with a side dish of grated potatoes. I decided to give it a try.
I have to admit, I had a bit of a struggle because I didn't grate enough potatoes initially, and two chicken fillets made a mountain of chops. But it was worth it! Tender chicken fillet remains juicy, and the potato breading is appetizingly crispy! But you should cook them just before serving, «hot off the presses» because then the potatoes lose their crispness, but the dish is still delicious.
I served the chops with a vegetable salad, as they are both meat and garnish. It was very tasty, I recommend it!
Composition:
- chicken fillet – 2 pcs.
- mushrooms – 4-5 pieces (optional)
- garlic - 2 cloves (optional)
- hard cheese – 100 gr.
- potatoes – 7-8 pcs.
- eggs – 2 pcs.
- salt, pepper
- sunflower oil for frying
Cooking chicken chops with potatoes:
Clean the chicken fillets from the veins and cut lengthwise into 2-3 chops.
If the chops are very large, split them in half. Lightly baste the meat with salt and pepper.
Grate the potatoes into a grater. Ideally use a grater for «Korean» carrots, but I grated on a regular coarse one. Salt the potatoes and set aside for 2-3 minutes to let them juice. Drain the juice and beat 2 eggs into the potatoes.
Rub the cheese on a fine grater. If using mushrooms, peel and finely chop them. Finely chop the garlic.
Heat the sunflower oil in a frying pan, place 1 tbsp of potatoes in the pan and melt, top with the chop, on top of it – mushrooms and cheese, and cover everything with another portion of potatoes.
Fill with the potatoes.
Use a spoon to correct the potatoes so that they completely cover the filling.
Fry under a closed lid over low heat on both sides until browned. It is convenient to turn this "construction" with two spatulas - one to hold the bottom, and the second - the top.
Serve immediately.
