Chicken legs baked with pumpkin
My regular readers must have noticed a long time ago that I'm a big pumpkin fan. There are recipes with pumpkin on the blog: porridge, pancakes, salads, pies and muffins galore. And responsibly I declare to you - in unsweetened version pumpkin is as beautiful as in sweet! Pumpkin is not only a treasure trove of vitamins, but also a great side dish for meat. This recipe came up on the fly, and was just as quickly eaten at dinner. The legs are juicy, the pumpkin is savory and flavorful, in general, everything you need to eat on a cold winter evening. But if you don't love pumpkin, just substitute it for other vegetables: potatoes, parsnips, bell peppers would be great in this dish.
Composition:
- chicken shanks - 8 pieces .
- pumpkin - 0,5 kg
- garlic - 3 cloves
- rosemary (fresh or dried) - 1 sprig
- olive oil - 2 tbsp.
- soy sauce - 1 tbsp.
- salt, pepper
- ground paprika - to taste .
Cooking chicken legs baked with pumpkin:
Clean the pumpkin from the skin and insides and cut into cubes with the side of 1,5-2 cm.
Cut the pumpkin into 1,5-2 cm cubes.
Place the pumpkin in a ceramic baking dish. Remove the middle of the garlic, chop the garlic finely and put it on top of the pumpkin. Snip the leaves off the rosemary sprig, chop and add to the pumpkin.
Wash the shanks and put them in the mold with the pumpkin.
Sprinkle the meat and vegetables with soy sauce and olive oil, salt, pepper, sprinkle with ground paprika and mix.
Mix.
Cook in a preheated 180 degree oven for about 45-60 minutes - until the meat and pumpkin are fully cooked.
