Couscous with vegetables and mushrooms

A bright and delicious Moroccan dish in Ukrainian interpretation.

For 4 servings you will need:

  • 200 gr of couscous
  • a medium carrot
  • and an onion proportional to it:)
  • a little bit of mushrooms
  • star anise pepper
You can add or change the vegetable ingredients in any order to make it taste good.

Cooking couscous with vegetables and mushrooms::

I cleaned the mushrooms, fried them in butter, and set them aside. Boiled some beans and chopped them. Fried carrots and onions in diced butter. I also added mushrooms and beans, covered them with couscous, poured water (I don't remember the amount - you can't go wrong by eye), salted and peppered them, and covered the pan with a lid. It cooks quite quickly - about 15 minutes. Then I added some black sesame seeds and cumin. It turned out to be a delicious Moroccan dish in a Ukrainian interpretation.
