Cooking wheat kutya:
To prepare kutya, prepared, pre-cleaned wheat is used. It can be bought before the holidays at markets or in stores.
Wheat should be washed and soaked in water for 2-3 hours.
After that, drain the water and pour the wheat with cold water in the ratio of 1:2.5, that is, 0.5 liters of wheat pour 1.25 liters of water. Put the wheat on the fire and bring it to a boil. Once the water boils, reduce the heat to low so that there is not a rapid boil and the wheat languishes. Cook the wheat for 40-60 minutes. It should become soft, but not cooked.
Meanwhile, rinse the raisins and pour hot water over them. Steam the raisins for 20-30 minutes, after which the water should be drained.
Also rinse the poppy seeds with water, pour boiling water and boil for 5-7 minutes. After that, drain the water and grind the poppy in a mortar until white milk appears from the poppy.
Rinse the ready wheat with cold water, dress to taste with honey or sugar, add raisins, poppy seeds and nuts to taste.
