Vegetable stew with zucchini
A juicy, light, summer dish that won't spoil your figure. You can make this stew from any vegetables, it's easy to prepare, but it's very flavorful, tasty and quick.
Composition:
- potatoes - 4-5 tubers
- onion – 1 pcs.
- bell pepper – 1 large
- carrots – 2 pcs.
- tomatoes – 4 pcs.
- zucchini – 1 medium
Cooking vegetable stew with zucchini:
In a heavy-walled saucepan, fry finely chopped onion in vegetable oil until golden. Add the coarsely grated carrots and fry lightly. After that add diced pepper, potatoes and zucchini to the pot, add a little water if necessary (literally 3-4 tbsp. l., because the vegetables will let the juice), salt, add spices to taste and stew over medium heat, stirring occasionally.
When the vegetables are almost ready (potatoes can be easily broken apart when pressed with a fork), add diced tomatoes to the pot, and stew for another 5-7 minutes.
Delicious both cold and hot.
