Pasta with tuna and tomatoes by Jamie Oliver
Pasta called «Jules»s Favorite Lunch; from Jamie Oliver's recipe book. Delicious, hearty pasta with a tomato, slightly spicy sauce. Simple ingredients and a stunning result.
Constituents (for 2-3 servings):
- olive or sunflower oil
- onion – 1 piece (red is better)
- chili pepper – 1 piece
- basil – 1 bunch
- ground cinnamon – 0.5 tsp.
- tomatoes in their own juice – 400 gr.
- tuna in olive oil – 300 gr.
- pasta – 250-300 gr.
- zest and juice of 1 lemon
- parmesan
Cooking:
Finely chop the onions. Remove the seeds from the chili peppers and chop finely. Strip the leaves from the basil sprigs and chop the stems finely.
Heat oil in a thick-bottomed skillet, pour in onion, chilies, basil stems, season with cinnamon and fry over low heat for 5 minutes – until onion softens. Increase the heat and add the tomatoes, tuna and salt.
Mash the tomatoes with a spoon, bring the sauce to a boil and simmer for about 20 minutes until the sauce thickens slightly.
Meanwhile, boil the pasta in salted water, following the instructions on the package. Discard the cooked pasta in a colander (save some of the water in which the pasta was cooked).
Mix pasta well with tuna sauce and finely chopped basil leaves, add lemon zest and juice. If necessary, slightly dilute the sauce with the remaining water from cooking the pasta. Sprinkle pasta with grated parmesan and serve immediately.
