Simple vegetable gravy

This is not even a recipe, but an idea for a light and slightly spicy vegetable gravy. It is quick and easy to prepare and will go well with any side dish - cereals, potatoes or pasta, and will also be a great addition to meat.

Compost:

  • celery stalks - 2 pcs.
  • garlic - 2 cloves
  • large carrot - 1 piece
  • onion - 1 pc.
  • tomatoes in their own juice - 400 gr.
  • fresh chili pepper - 1 pc.
  • vegetable oil
  • salt, freshly ground pepper

Cooking vegetable gravy:

Peel the vegetables, grate the carrots coarsely, dice the onion and celery into small cubes, mince the garlic, and peel and chop the chilies.
In a skillet, splash some vegetable oil and lightly fry the onions. Then add carrots, garlic and celery.

Stir the vegetables and braise over medium heat for 2-3 minutes, then add the chili and braise, stirring occasionally, over medium heat for about 10 minutes. If you don't like spicy food, you can skip this step.

Add the chili to the vegetables.

Meanwhile, peel the canned tomatoes in their own juice from their skins.
Add the tomatoes to the skillet along with the tomato juice and mash them with a fork.

Stew the gravy until it reaches the desired consistency - about 5-8 minutes.
Salt and pepper the gravy to taste and serve with your favorite garnish.
