Grilled fish with vegetables
A very light and tasty Mediterranean-style dish. Virtually no fat, juicy and flavorful vegetables and delicious fish. And it's perfectly simple to prepare. The only prerequisite is an oven with a grill function, but you can try baking this fish in a conventional oven.
Composition:
- fresh fish - 2 pcs.
- bell pepper - 4 pcs.
- eggplant - 1-2 pcs.
- onion - 1 pc.
- tomatoes - 4 pcs.
- sunflower or olive oil - 2 tbsp.
- salt, pepper - to taste
Grilled fish with vegetables:
Fresh fish (it is better to take sea fish, dorado, sea bass, etc.) clean from scales, gut and remove gills.
Salt and pepper the fish, grease it with a little sunflower or olive oil.
Peel onions and cut into 4 pieces, cut medium-sized tomatoes into halves, cut eggplants into ribbons or circles with a thickness of about 3 cm. Wash the bell peppers and leave them whole.
Put the vegetables (except tomatoes) in a bowl, salt, pour the remaining oil and mix.
Place the fish and vegetables on the grill in a single layer.
Bake in a preheated oven at 200-220 degrees in "grill" mode (under the top heating element) for about 30 minutes (guided by your oven). Place a baking tray under the grill to collect dripping juices.
Serve hot with slices of toasted bread.
