Vareniki with cherries
This recipe can be made with any berries, but our family loves cherry dumplings the most. Tender, melt-in-your-mouth dough with a delicious, juicy filling. The recipe for the dough was shared by a lovely girl Elena, for which I am very grateful to her. I warmly recommend you to try it!
Composition:
- cream butter - 1 tbsp .
- egg - 1 piece
- flour - about 2-3 tbsp.
- water - 1 tbsp.
- salt - a pinch .
for the filling:
- Cherries - 1 kg
to serve:
- sugar
- sour cream
Cooking dumplings with cherries:
Wash the fresh cherries and remove the pits. Discard the peeled cherries in a colander to get rid of excess juice (it can cause the dumplings to crack when cooked). If the cherries are frozen, defrost them and also throw them on a colander to drain off excess liquid.
Meanwhile, prepare choux dough for the dumplings.
In a cup of boiling water, melt 1 tbsp butter and salt. In a bowl, sift 1 tbsp of flour, make a depression and pour the water into it. Mix everything quickly.
Wait a few minutes for the mass to cool slightly and add 1 egg.
Knead the dough, gradually adding flour until it becomes elastic. The amount of flour will depend on the quality of the flour.
Add 1 egg.
Roll out the dough not very thinly and cut out circles with a glass. Put a few cherries on each dough circle and mold the dumplings. (You can add sugar to the filling, but this may cause the dumplings to stick together, it is better to sprinkle sugar on the finished dumplings).
This dough is very easy to work with - it doesn't tear and holds its shape well.
In a saucepan, boil water and drop the dumplings into it. Boil them for about 3-5 minutes after boiling.
Remove the dumplings with a skimmer.
When serving, sprinkle the dumplings with sugar and pour sour cream over them.
