Cream pancakes

This pancake recipe is listed as a basic recipe in the Italian cookbook "The Silver Spoon". The pancakes can be made sweet or savory, depending on your preference. Pancakes turn out to be very tender, velvety in taste. It is better to eat them hot, although they remain tasty when cold.

Insert ingredients:

  • flour - 100 gr.
  • eggs - 2 pcs.
  • milk - 250 ml
  • butter - 25 gr.
  • sugar - to taste
  • salt - a pinch
  • sunflower oil for greasing

Cooking cream pancakes:

Sift the flour into a bowl, add the eggs and salt, pour in 3-4 tbsp of milk and mix.

Gradually pour in the remaining milk and stir. This should make a fairly runny batter.

Allow the batter to come together.

Melt the butter in a water bath or microwave, cool slightly and pour into the batter.

Whisk the dough for a few minutes and let stand for at least an hour.

Grease a pancake baking pan with sunflower oil, heat, pour in 2-3 tbsp of batter and spread it on the pan.

Fry the pancake until browned on the bottom side, then flip and brown the second side.

Bake all the pancakes in the same manner.
Serve hot, sprinkled with jam, sour cream, cream, etc.

Serve hot.
