Caviar with baked eggplant
Juicy, flavorful eggplant caviar that's easy to make. A great dish for summer.
Composition:
- eggplant - 4 large pieces .
- tomato - 3 large fleshy pieces .
- bell pepper - 3 large pcs.
- carrot - 1 large carrot
- onion - 1 pc.
- garlic - 4 cloves
- vegetable oil - 4 tbsp.
- salt, black pepper - to taste
Cooking:
Wash eggplants, pierce in several places with a fork, put on a baking tray and bake in a preheated oven at 180 degrees Celsius until soft - 45-60 minutes.
Bake eggplants.
Peel the skin off the cooked eggplant.
Dice the eggplant into medium sized cubes.
Chop onions, bell peppers, grate carrots.
In vegetable oil, fry onions until soft, then add carrots and bell peppers and fry all 5-10 minutes.
Add finely chopped garlic, diced tomatoes and eggplant and stew over low heat until vegetables are cooked.
Stir in the caviar, salt and add pepper to taste. Very tasty with garnish, meat or just fresh bread.
