Spanish scrambled eggs with vegetables - piperada.
A very beautiful, colorful, tasty and easy to prepare dish. Thanks to the quickness of preparation, this dish can be a great breakfast or dinner when, coming from work, there is no energy for something more "serious". Thanks Irina for the recipe.
Constituents (for 2 servings):
- sweet bell pepper - 2 pieces .
- onion - 1 piece .
- garlic - 2 cloves
- cherry tomatoes - a handful (you can substitute two ordinary red tomatoes)
- eggs - 4 pcs.
- vegetable oil for frying .
Cooking:
Clean the vegetables. Slice the onions into half rings, cut the peppers into strips, and mince the garlic.
In a cast iron skillet over medium heat, fry the onion and garlic, then add the peppers and tomatoes and, stirring, cook until desired softness.
Then in the vegetable stew, make cavities and beat eggs into them.
Cover the skillet with a lid and cook until the protein has set.
You can serve this dish right in the skillet.
